Peanut Butter Apple Cinnamon Breakfast Bars!

I’m going to start this with a disclaimer – I DO NOT create my own recipes. I’m a good cook and a real good baker but I’m not a chef, like, at all. I find recipes, try them out, and tweak them a little…but that’s really the extent of my creative cooking. (My husband on the other hand can go in the kitchen with 5 ingredients and put a delicious meal on the table. I’m a lucky gal.)

That being said, I’ve made some awesome recipes and some not so awesome recipes (anyone remember that post about my muffins exploding?). My goal here is to give you recipes that I’ve made and the family has gobbled up, leaving the experimentation and waste of money out of your day.

So in celebration of the first day of school for my local readers, here is a perfect healthy breakfast bar that has kids begging for seconds before mommy finishes her first. Seriously. It happened today 🙂

A quick, healthy grab and go breakfast option. Make a pan on Sunday and enjoy them all week long!

Serves: 6-8
  • ¾ c Skim milk
  • ½ c peanut butter
  • 1 tsp vanilla
  • ¼ c applesauce
  • ¼ c honey
  • 1 cup grated apple (squeezed to remove moisture)
  • 1 egg
  • 1½ c rolled oats
  • ¼ c white whole wheat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  1. In a bowl, combine the first 7 ingredients and mix well.
  2. Add remaining ingredients and stir until just combined.
  3. Spoon into a greased 9×9 pan and bake at 350 degrees for about 30 minutes.
